Air Fryer Red Velvet Crinkle Cookies

- ½ cup cocoa powder
- ¾ cup granulated sugar
- ¼ cup light brown sugar
- 6 tbsp salted butter melted
- 1 tsp vanilla extract
- 2 eggs room temperature
- 2 tsp corn starch
- 1 cup all-purpose flour
- 1 tsp baking powder
- ½ tsp kosher salt
- ⅓ cup powdered sugar
In a medium mixing bowl, whisk together the cocoa powder, both sugars, melted butter and vanilla extract. Add in the eggs and whisk until smooth.
Sift in the flour, corn starch, baking powder and salt and whisk until combined. The dough will be soft so cover the bowl with saran wrap and chill for 45-60 minutes.
After the dough has chilled, set the Instant Pot Air Fryer Vortex Plus to Bake at 350. Scoop the dough and roll in the remaining powdered sugar. Place 4 of the dough balls into the preheated air fryer basket and bake for 10-12 minutes, or until the edges are set. Repeat until all the cookies are made. Enjoy!
