Ingredients
1 ¼cupssalted buttermelted, room temperature
1cuplight brown sugarpacked
1cupgranulated sugar
2tspvanilla extract
2eggsroom temperature
3cupsall-purpose flour
2tspcorn starch
1tspbaking soda
2cupsroughly chopped chocolate Halloween candyplus extra for topping
Instructions
In the bowl of a stand mixer or large bowl, combine the melted butter, brown sugar, granulated sugar and vanilla. Mix on low until combined. Add the eggs one at a time, mixing after each addition.
In a separate bowl, whisk together the flour, cornstarch, baking soda and salt. With the mixer on low, gradually add the dry ingredients and mix just until combined. Fold in the chopped candy with a spatula.
Line a cookie sheet with parchment paper. Using a large cookie dough scoop, scoop the dough into 24 even portions. Cover and refrigerate for at least 45 minutes or up to 24 hours.
Preheat the oven to 350°F. Arrange about 5 dough portions on a parchment-lined cookie sheet, leaving at least 2 inches between them. Keep the remaining dough refrigerated until needed.
Bake for approximately 11 minutes or until the edges are just set and lightly golden. The centers should still look soft.
Immediately after removing the cookies from the oven, place a round cookie cutter slightly larger than each cookie around it. Keeping the cutter against the baking sheet, gently move it in small circles to scoot the edges into a perfectly round shape.
While the cookies are still hot and soft, gently press a few extra candy pieces into the tops.
Let cool on the cookie sheet for 5 minutes before carefully transferring to a wire rack to cool completely. Allow the baking sheet to cool before baking the next batch.
Notes
Use any combination of chocolate candy, including Snickers, Milky Way, Twix, 3 Musketeers, Reese’s, M&M’s, peanut M&M’s, Whoppers, Heath, Butterfinger, or Kit Kat. You can also replace some of the candy with roughly chopped pretzels.
