Grinch Sugar Cookies

A fun take on a classic cookies, these are soft & chewy vanilla sugar cookies dyed green and topped with a heart

Ingredients

  • 1 cup salted butter melted, room temperature
  • 1 ½ cups granulated sugar
  • 2 tsp vanilla extract
  • 3 tbsp whole milk room temperature
  • 1 egg room temperature
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tbsp corn starch
  • ¼ tsp kosher salt
  • ¼ cup granulated sugar for rolling the cookies in
  • green & yellow food dye
  • heart sprinkles

Instructions

  • Add butter, granulated sugar and vanilla extract to the bowl of a stand mixer and mix until combined. Add in the milk and egg and mix on low to combine.
  • With the mixer on low, slowly add in the flour, cornstarch, baking soda, and salt. Add in the green and yellow food dye, start small and add and adjust until you get the color you want. I always make it a little darker because they will lighten up a bit when they bake! Mix until just incorporated. Cover the bowl with clear wrap and chill for 30-60 minutes.
  • Once the dough has chilled, remove from the refrigerator and preheat the oven to 350°. Line a cookie sheet with parchment paper and set aside. While the oven is preheating, use a medium cookie dough scoop (about 2 1/2 tablespoons of dough per dough ball) and scoop 20 cookies. Roll in the remaining granulated sugar. Space 2 inches apart and bake for 10 minutes, or until the edges of the cookie are just set.
  • Remove from the oven and gently press one heart sprinkle into the cookie. Allow to cool for 5 minutes on the cookie sheet before transferring to a cooling rack to cool completely.
