Slightly warm the tortilla in the microwave for 5-6 seconds to make it soft and easier to roll! Start with a large tortilla and lay it flat. In the center, add a scoop of each leftover dish: Don’t overfill the tortilla, or it’ll be difficult to roll up!
Spread a layer of mashed potatoes as the base. Add a generous helping of stuffing on top of the potatoes.Sprinkle on some corn for a touch of sweetness and texture.Layer slices of turkey for that hearty, protein-packed bite.
Fold the sides of the tortilla in, then roll it tightly from one end to the other, tucking as you go to keep all the fillings secure.
Heat a large skillet over medium heat and lightly coat it with a bit of butter or oil. Place the rolled-up Gobblerito seam-side down on the skillet and cook for 2–3 minutes, or until the tortilla turns golden brown and crispy. Flip and repeat on the other side.
While the Gobblerito crisps up, warm your gravy in a small saucepan or microwave. Spoon some cranberry sauce into a bowl for dipping. These two sauces are essential—they bring all the flavors together with every bite!
Slice the Gobblerito in half for easier dipping (and to show off the beautiful layers of Thanksgiving goodness inside). Serve with your gravy and cranberry sauce on the side, and enjoy this handheld Thanksgiving feast!
