For the brownies:
- 1 cup salted butter melted
- 2 tbsp vegetable oil
- 1 ¼ cup granulated sugar
- 1 cup light brown sugar
- 4 eggs room temperature
- 1 tsp vanilla extract
- ½ tsp kosher salt
- 1 cup all-purpose flour
- 1 cup cocoa powder
- 1 ½ cups roughly chopped Oreos
For the frosting:
- ½ cup salted butter room temperature
- ½ cup cocoa powder
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2-4 tbsp heavy cream or milk
- 1 cup roughly chopped Oreos
For the brownies:
Preheat oven to 350°F. Grease and line a 9x13 or 8x12 metal pan with parchment paper. You can also make this in a 9x9 square pan, just add 5-8 minutes onto the bake time.
In a large bowl, whisk together melted butter, oil, granulated sugar, and brown sugar until combined. Add eggs and vanilla, then beat for 30 seconds until the mixture lightens in color.
Whisk in flour, cocoa powder, and salt. Stir until just combined. Gently fold in the chopped Oreos. Pour batter into prepared pan and spread evenly. Bake for 25–30 minutes, until the center is just set and no longer jiggles. (Add 5–8 minutes if you like cakier brownies.) Let cool completely before frosting.
For the frosting:
In a medium bowl, use a hand mixer or stand mixer to beat together the butter, cocoa powder, and vanilla. Slowly add in powdered sugar and mix until smooth and creamy. Add 2 tablespoons of milk or cream until it reaches a spreadable consistency.
Spread frosting over cooled brownies. Sprinkle with chopped Oreos and gently press them in so they stick. Slice and serve!
