- 1 cup salted butter room temperature
- 1 ½ cups granulated sugar
- 2 eggs room temperature
- 2 tsp vanilla extract
- ¾ tsp almond extract
- 3 cups all-purpose flour
- 1 tbsp corn starch
- 1 ½ tsp baking soda
- ¼ tsp salt
- ¾ cup sprinkles for the cookie dough
- ¼ cup sprinkles to roll cookies in before baking
In the bowl of a stand mixer combine butter and granulated sugar. Cream on medium high speed until light and fluffy, between 3-5 minutes. Add in the eggs, vanilla extract and almond extract and mix on low until incorporated. Add in the flour, corn starch, baking soda, and salt and mix on low until just combined. Pour in ¾ cup of sprinkles and use a spatula to fold them in gently.
Chill the dough for at least 30 minutes or up to 24 hours. Scoop cookies before chilling (on a parchment-lined baking sheet, covered with plastic wrap) or chill the whole bowl (wrapped in plastic). If chilled as a whole bowl, let sit at room temp for 15–20 minutes before scooping.
Preheat the oven to 350°F. Scoop 2-tbsp portions (20 cookies total), roll tops in sprinkles, and space 2 inches apart on a cookie sheet. Bake for 8–9 minutes until edges are set. Cool on the sheet for 3 minutes, then transfer to a rack to cool completely.
