Brown Butter Banana Snack Cake

Ingredients

  • ½ cup salted butter
  • ¾ cup light brown sugar
  • ¼ cup granulater sugar
  • 3 very ripe bananas about 1 ½ cups mashed with a fork
  • 1 egg room temperature
  • 1 ½ tsp vanilla extract
  • 2 tbsp vegetable oil
  • ¼ cup sour cream room temperature
  • 1 ¾ cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¾ tsp ground cinnamon
  • ½ tsp kosher salt
  • powdered sugar for dusting

Instructions

  • Preheat oven to 350°F. Grease or line a 9x9 baking pan. In a saucepan over medium heat, melt butter and continue cooking until golden brown and nutty (about 4–5 minutes). Let cool slightly.
  • In a large bowl, whisk together mashed bananas, brown sugar, granulated sugar, egg, vanilla, oil, sour cream, and browned butter until smooth.
  • Stir in flour, baking soda, baking powder, salt, and cinnamon. Mix just until combined. Pour batter into prepared pan and smooth the top. Bake for 30–38 minutes, or until the center is set and a toothpick comes out with a few moist crumbs. Let cool completely, then dust generously with powdered sugar before slicing.
