Reese’s Pieces Peanut Butter Cookies

I originally started with one of my favorite cookie bases (from these Peanut Butter Peanut M&M Cookies) and decided to swap the peanut m&ms for Reese’s Pieces just to see how they would turn out. The Reese’s Pieces add the perfect crunch, extra peanut butter flavor, and a fun pop of color throughout. The result is a thick, soft, chewy cookie that tastes like peanut butter in every bite.

The best part? These cookies are incredibly easy to make and look absolutely adorable with a few extra Reese’s Pieces pressed into the tops after baking.

These cookies have everything I love in a homemade cookie but not dry like typically peanut butter ones. They are thick and chewy in the center with lightly crisp edges. Recipe Tips

Underbaking the cookies This is essential to getting the texture right. I bake my cookies for 11 to 12 minutes and then remove them from the oven and let them cool completely on the cookie sheet. Letting them cool on the hot pan will continue cooking them at a lower temperature without drying them out. This is what gives you that thick, chewy center. If you prefer a slightly crispier cookie, bake for 13 to 14 minutes.

Reese’s Pieces I recommend using regular sized Reese’s Pieces for this recipe. They hold their shape beautifully while baking and add little bursts of peanut butter flavor throughout the cookies. For the prettiest cookies, save a handful to press into the tops immediately after baking. Not only does this make the cookies look bakery worthy, but it also adds even more peanut butter flavor to every bite.

Chilling the Dough Chilling the dough helps prevent the cookies from spreading too much while baking and also enhances the flavor. I recommend chilling the dough for at least 30 minutes before baking. I keep the dough in the refrigerator and only pull out what I need for each baking sheet. The dough should be baked straight from the refrigerator.

Baking Sheet For all of my cookie recipes, I recommend using a quality cookie sheet. You can use a jelly roll pan, however I find the edges of the cookies tend to brown faster and bake differently. A light colored baking sheet helps the cookies bake evenly and prevents the bottoms from becoming too dark.

How to Get Perfectly Round Cookies

If your cookies spread unevenly while baking, don’t worry. While the cookies are still warm, place a round glass or large cookie cutter around each cookie and gently swirl it in a circular motion. This helps reshape the edges and creates perfectly round bakery style cookies every time.

How to Make Bakery Style Cookies

If you want cookies that look like they came straight from a bakery, there are two simple tricks. First, as soon as the cookies come out of the oven, use a large round glass or cookie cutter and gently swirl it around the cookie to reshape it into a perfect circle. Second, immediately press 4 to 5 Reese’s Pieces into the tops of the warm cookies. Not only does this make them look absolutely adorable, but it also adds extra peanut butter flavor in every bite.

Storage

Store these cookies in an airtight container at room temperature for up to 4 days. If you want to keep them extra soft, place a slice of bread in the container with the cookies. The cookies will absorb moisture from the bread and stay soft and chewy. For longer storage, freeze the baked cookies for up to 2 months or freeze the cookie dough balls and bake as needed.

Ingredients
  

  • 1 cup salted butter melted, room temperature
  • 1 cup creamy peanut butter not natural style
  • 1 ½ cups light brown sugar
  • ½ cup granulated sugar
  • 2 tsp vanilla extract
  • 2 ⅓ cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp kosher salt
  • 1 cup Reese's Pieces
  • extra Reese's Pieces for topping

Instructions
 

  • In a large bowl, whisk together melted butter and peanut butter until smooth. Add brown sugar and granulated sugar and mix until fully combined. Add eggs, egg yolk and vanilla. Mix until smooth.
  • Stir in flour, baking soda, baking powder and salt. Mix just until combined. Do not over mix. Fold in Reese's Pieces, cover and chill dough for 30-45 minutes.
  • Preheat the oven to 350℉ while the cookie dough is chilling. Bake for 11–12 minutes, until edges are set and centers look slightly underbaked. Immediately press more Reese's Pieces into the tops. Let cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.
