Why You’ll Love This Recipe

  • Quick & Easy: Using store-bought puff pastry keeps things simple, while the air fryer ensures minimal prep and cleanup.
  • Perfect for Entertaining: These are the ultimate crowd-pleaser—elegant, flavorful, and perfect for the holidays.
  • Balanced Flavors: Creamy brie, sweet honey, and tart cranberry sauce create a beautifully balanced bite.

Recipe Tips

  1. Work with Chilled Brie: Cold brie is easier to handle and slice. For clean cuts, use a sharp knife and wipe it clean between slices. I love the mini brie rounds but if you can’t find them you can use a large brie and cut into cubes.
  2. Air Fryer: I love my Instant Pot Vortex Plus Air Fryer but any air fryer will work!
  3. Customize the Filling: Swap the cranberry sauce for fig jam, apricot preserves, or even a sprinkle of chopped nuts for different flavor combinations.
  4. Seal the Pastry Well: Pinch the edges tightly to prevent the filling from oozing out during cooking.
  5. Avoid Overcrowding: Leave space between the bites in the air fryer basket to ensure even cooking.
  6. Serving Tip: These bites are best served warm, but you can prepare them in advance and reheat in the air fryer for a few minutes before serving.

Baking in the oven

If you don’t have an air fryer, you can easily bake these Mini Brie & Honey Puff Pastry Bites in the oven! Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the assembled bites on the prepared sheet, leaving a bit of space between each one. Bake for 18-22 minutes, or until the puff pastry is golden brown and puffed up. Keep an eye on them in the last few minutes to avoid over-browning. Enjoy warm for the best flavor!

Storage & Reheating

  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 2 days.
  • Reheating: Reheat in the air fryer at 350°F for 3-5 minutes to restore crispiness.

Ingredients

  • 5 mini brie
  • 1 sheet store bought puff pastry
  • ¼ cup honey
  • ¼ cup cranberry sauce or jam
  • 1 egg
  • 1 tsp milk

Instructions

  • Allow puff pastry to sit at room temperature for 15 minutes, or until you can easily unfold. Prepare a small baking sheet by lining with wax or parchment paper and set aside.
  • Lightly dust a countertop with flour and unfold the puff pastry. Use a pizza cutter or knife to cut 5 4 inch squares.
  • In the center of each square add 1 teaspoon of honey, ensure the honey stays in the center and doesn’t go to the edge of the dough.
  • Use a sharp knife to make shallow, evenly spaced slits across the top of the chilled mini brie rounds, being careful not to cut through the bottom
  • Place the brie rounds on top of the honey, again ensuring the honey doesn't run of the edges of the dough. Add about 1 teaspoon of cranberry sauce or jam on top of the brie. In a small bowl whisk together the egg and milk to create an egg wash.
  • Fold up one corner of the dough to the center of the brie and gently press so it stays. Use a pastry brush to cover the folded up side in egg wash. Fold the next corner up, slightly overlapping the first fold and gently press to seal. Repeat with egg wash and remaining corners. The end result will look like a small square envelope! Place the brie bites on the prepared pan lined with wax or parchment paper and place in the refrigerator for 15 minutes.
  • Select Air Fry on the air fryer and preheat to 375°F. When preheated, add the brie bites to the basket, spacing evenly apart, and cook for 15 minutes. Remove from the air fryer and allow to cool for 3 minutes before serving. Drizzle with additional honey if desired!
