Grinch Rice Krispie Treats

I am so excited. Why am I so excited?? Maybe because I’m sharing one of my all-time favorite recipes, but with a festive holiday twist. Or maybe it’s because I truly believe I’ve cracked the code on how to make better-than-store-bought Rice Krispie treats.

These Brown Butter Rice Krispie Treats have been in my top three favorite recipes for years. They’re soft, gooey, perfectly buttery, and completely nostalgic, in the very best way. And today, we’re turning them into the cutest holiday dessert: Grinch Rice Krispie Treats.

All I did was take my classic brown butter base, dye it the perfect Grinch green, cut the treats into squares, and finish each one with a single heart sprinkle. Simple, festive, and honestly… adorable.

Why Brown Butter Changes Everything

If you’ve been around here for a while, you know brown butter is a flavor I love to use whenever I can. It adds depth, richness, and a subtle nutty flavor that takes simple desserts to the next level (like in my Brown Butter Chocolate Chip Cookies).

Traditional Rice Krispie treats are good—but they’re usually missing flavor. The recipe on the cereal box calls for just 3 tablespoons of butter, one bag of marshmallows, and cereal. By increasing the butter and marshmallows, adding vanilla and salt, and browning the butter first, you get a treat that tastes bakery-worthy.

How to Get That Perfect Grinch Green

To get that bright Grinch green color, I added neon green food dye directly to the butter and marshmallow mixture before stirring in the Rice Krispies. You can also mix green and yellow food coloring if that’s what you have on hand, both work great. Adding the color before the cereal helps it distribute evenly without over mixing later.

Once they’re set, I cut them into 15 squares and topped each one with a single red heart sprinkle because even the Grinch has a heart. I use Wilton heart sprinkles, which are the perfect size and pop beautifully against the green. (I’ll link them here so you can grab the exact ones I use.)

Recipe Tips for Perfect Rice Krispie Treats

  • Don’t press too hard. One of the biggest mistakes is packing the mixture into the pan. Gently stretch it to the edges and lightly pat it down.
  • Wet your hands. Before touching the mixture, run a little water over your hands and rub them together. The marshmallows won’t stick, and you won’t crush the treats.
  • Use a parchment-lined pan. It makes removing and slicing so much easier.
  • Great for sharing. These are perfect for holiday parties, school events, cookie swaps, or gifting.

These Grinch Rice Krispie Treats are made with rich brown butter, extra marshmallows, and a splash of vanilla for an ultra gooey, bakery style twist on the classic treat. Dyed the perfect Grinch green and finished with a heart sprinkle, they’re an easy, festive dessert that comes together in under 20 minutes. Perfect for holiday parties, gifting, or a fun seasonal treat at home.

Ingredients
  

  • 1 cup salted butter browned
  • 20 oz mini marshmallows
  • 1 tbsp vanilla extract
  • 10 cups Rice Krispies
  • heart sprinkles

Instructions
 

  • Line a 9×13-inch pan with parchment paper and lightly mist with nonstick cooking spray. Set aside.
  • In a large pot, melt the butter over medium heat. Once melted, stir continuously. The butter will foam up twice; after the second time, it will begin to brown and give off a nutty aroma. Immediately remove from heat so it doesn’t burn.
  • Stir in the vanilla extract. The mixture will bubble, continue stirring for about 30 seconds until it settles.
  • Add half of the marshmallows and stir until almost melted. Add the remaining marshmallows and continue stirring until fully melted and smooth. Add food coloring to the butter/marshmallow mixture and stir until you reach your desired Grinch green color.
  • Add the Rice Krispies, about 2 cups at a time, gently folding until evenly combined. Transfer the mixture to the prepared pan. Lightly wet your hands and gently press the mixture to the edges, being careful not to pack it down. Let cool slightly, then cut into 15 squares. Press one Wilton heart sprinkle into the top of each square. Serve and enjoy!
