Pie is a quintessential summer dessert, but sometimes making a full pie can be challenging. I created these pie bars so that you can have all the flavors of pie without worry about your crust sinking or not baking correctly. This recipe also uses the canned cherry pie filling. I love making things 100% homemade, but the filling is perfectly tart and cherry filled so I think you’re going to love it!

For the pie dough I chose to use store bought. I have homemade dough recipes but I wanted this dessert to be super easy. Feel free to use homemade if you prefer! I also cut the strips in varying widths. I like this look because it doesn’t have to be perfect and it looks rustic and pretty.

Cherry Pie Bars
Ingredients
For the crust:
- 2 ¼ cup all-purpose flour
- ¾ cup cold butter I prefer salted but you can use unsalted
- ⅔ cup granulated sugar
- 1 tsp vanilla extract
- ½ tsp salt
Additional ingredients:
- 2 cans 21 oz cherry pie filling
- store bought pie dough
Instructions
For the crust:
- Preheat the oven to 350° and grease and line a 9×13 in metal baking pan with parchment paper. Combine all of the ingredients for the short bread crust in a large food processor. Pulse until the mixture resembles wet sand, about 30 seconds.
- Pour the crust into the prepared pan and press evenly down. I like to use a glass to press the mixture down and get it all the way to the corners. Use a fork to poke into the crust and bak for 15 minutes.
For assembly:
- Pour the cherry filling into the pan. Use both store bought pie sheets and cut strips of varying thickness to fit length and width wise across the pan. Top the cherry pie filling with a basket weave pattern. Bake for 30 minutes, or until the pie crust is golden brown.
- Allow to chill for at least 20 minutes before cutting. Serve with vanilla ice cream and enjoy!
