Homemade Pepperoni Rolls

There are few things more comforting than warm bread fresh from the oven, and when that bread is stuffed with gooey mozzarella, zesty pepperoni, and a brush of garlicky butter… well, let’s just say it doesn’t last long on the table. These Homemade Pepperoni Rolls are one of those recipes that feel special but are secretly simple.

What makes this recipe so easy is that it starts with frozen bread dough. I often use Rhodes, but really, any brand of frozen raw bread loaf works perfectly. It gives you that homemade taste without the extra step of making dough from scratch. Once thawed, all you need to do is roll it out, load it up with pizza flavors, roll, bake, and slice.

The Backstory Behind Pepperoni Rolls

Pepperoni rolls have deep roots in American kitchens, particularly in West Virginia, where they were once packed into miners’ lunch boxes as a hearty, portable meal. Over the years, they’ve become a snack-time favorite everywhere, often found at football games, parties, and family gatherings.

This version brings all the nostalgia but in an approachable, at-home way. It’s part stromboli, part pizza roll, and entirely crowd-pleasing.

Why You’ll Love This Recipe

  • Kid-friendly & crowd-approved – these rolls are fun to slice into pinwheels for little hands or serve whole for big appetites.
  • Game-day ready – cut them into bite-sized pieces and serve with marinara for an easy appetizer.
  • Customizable – swap the pepperoni for salami, sausage crumbles, or keep it vegetarian with sautéed veggies.
  • Garlic butter glow-up – the real magic comes from brushing garlic butter before and after baking. It makes the crust golden and flavorful.

Ingredients You’ll Need

  • Frozen raw bread dough – one loaf, thawed (I use Rhodes, but any brand will do).
  • Butter – salted, melted.
  • Seasonings – garlic powder, Italian seasoning, and a pinch of salt.
  • Pizza sauce – just a thin layer, so the bread doesn’t get soggy.
  • Mozzarella cheese – shredded.
  • Pepperoni slices – as much or as little as you like.

Step-by-Step Instructions

  1. Thaw & prep the dough
Let the frozen bread loaf thaw completely according to package instructions. It should be soft and easy to roll out.
  2. Make the garlic butter
Stir melted butter with garlic powder, Italian seasoning, and a touch of salt. This will be your base flavor and finishing touch.
  3. Roll out the dough
On a lightly floured surface, roll the dough into a rectangle, about 12×16 inches.
  4. Layer the flavors
    • Brush a thin layer of garlic butter over the dough.
    • Spread on a little pizza sauce, leaving ½ inch around the edges.
    • Sprinkle with mozzarella cheese.
    • Top with pepperoni slices.
  5. Roll it up
Roll from the long edge into a log, keeping it tight. Pinch the seam and tuck the ends.
  6. Bake until golden
Place seam-side down on a baking sheet lined with parchment. Brush with more garlic butter. Bake at 350°F for 30 minutes, or until golden brown and cooked through.
  7. Finish & serve
Brush with remaining garlic butter right after baking. Let it cool slightly, slice into thick rounds, and serve warm with extra pizza sauce for dipping.

Tips for Success

  • Don’t overload the fillings – less is more here; too much sauce or cheese will leak out.
  • Make it cheesy – mozzarella is classic, but provolone, cheddar, or an Italian blend all work.
  • Plan ahead – frozen bread dough takes time to thaw. Put it in the fridge the night before or on the counter for a few hours.
  • Leftovers reheat well – store slices in the fridge for 2–3 days. Reheat in the oven or air fryer to crisp up the crust.

Variations to Try

  • Veggie roll – add sautéed peppers, onions, mushrooms, or spinach.
  • Spicy kick – swap regular pepperoni for spicy pepperoni or sprinkle on red pepper flakes.
  • Cheeseburger style – use cooked ground beef, cheddar cheese, and a drizzle of ketchup and mustard before rolling.
  • Breakfast twist – fill with scrambled eggs, bacon, and cheddar for a morning-friendly version.

Whether you’re making these Pepperoni Rolls for a quick family dinner, a game-day spread, or just to satisfy a pizza craving, they always deliver that warm, cheesy comfort everyone loves. They’re simple enough for a weeknight but impressive enough to serve to guests—and once you try them, you’ll find yourself coming back to this recipe again and again.
