Salmon Burgers with a Lemon Dill Mayo

My husband and I love seafood. We also like to try to eat light during the week so that when the weekend comes, we can indulge in anything and everything salty and sweet! Seafood can get a bit repetitive, so I wanted to share one of our favorite recipes that we use to mix up our routine! It comes together in under 30 minutes and is perfect for a weekday meal or summer cookout!

Let’s talk about this Lemon Dill Mayo. If you know me or any of my family members, you know we are all about the condiments. If there isn’t at least one sauce or condiment on a burger, sandwich, or with the side of some fries, I’m not eating it. So when I was creating this recipe I knew that I needed the perfect topping to cut through the rich salmon and elevate the flavor. The lemon and dill add a fresh element that I just love, and the Old Bay helps to enhance the seafood flavor. When it comes to the other toppings, they can be customized to your liking! The easiest combo that I usually have in my fridge is lettuce (I used butter lettuce here) and red onion, but I also like to add avocado and tomato if it’s available!

As I mentioned above, this meal, start to finish takes under 30 minutes, which makes this a weekly staple in my home. Another bonus is that it all comes together in the food processor, which makes for an easy cleanup! After the ingredients are made up, this mixture will make 6 burgers. I like to use a 1/2 cup measure to evenly scoop and help to form the patties. Once formed, I place them on a baking sheet or tray lined with parchment paper and put in the fridge. While those are setting, I make the Lemon Dill Mayo!

I like to cook these on the stove out of convenience, but they are as equally delicious baked or grilled! You can grill them the same amount of time that you would saute them, but if you plan to bake the salmon burgers, preheat the oven to 425 degrees and bake for 15 minutes, flipping them half way through. These Salmon Burgers are a delicious way to switch up how you prepare you seafood! Make these for a cookout or mid week meal in under 30 minutes!

Ingredients
  

For the burger

  • 1 ½ lbs fresh salmon, skin removed
  • ¼ cup mayo
  • 3 tbsp Dijon mustard
  • ¼ tsp cayenne
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • 1 tsp lemon zest The zest of about half of a lemon
  • ¼ cup chopped red onion
  • 1 tsp fresh dill, chopped
  • ¼ tsp Kosher salt
  • ½ cup plain breadcrumbs
  • 1 6 pack of burger buns

For the Lemon Dill Mayo

  • 1 cup mayo
  • 2 tbsp lemon juice About the juice from a small lemon
  • 1 tbsp fresh dill, chopped
  • 2 tsp fresh parsley, chopped
  • ½ tsp Old Bay seasoning
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions
 

  • Add half of the salmon, ¼ cup of mayo and 3 tablespoons of Dijon mustard to a medium sized food processor. Blend until it becomes a paste, about 1 minute.
  • Chop the remaining salmon into chunks. To the mixture add the rest of the salmon, cayenne, garlic powder, black pepper, lemon zest, red onion, dill, salt and breadcrumbs. Pulse until the chunks break down to smaller pieces and the mixture comes together, about 30 seconds.
  • Using a ½ cup measure, scoop the mixture and form into patties. Place on a baking sheet lined with parchment or wax paper. When all six are formed, put the burgers in the fridge to chill and make the mayo!
  • In a medium sized bowl add all of the ingredients for the Lemon Dill Mayo. Stir by hand until all combined. Add salt and pepper to taste. Put away in the fridge until you're ready to serve!
  • In a large saute pan add 2 tablespoons of olive oil and turn to medium heat. Add 2-3 salmon burgers (whatever you can fit without them touching) and cook for 4 minutes. Flip the burgers after that time and cook for an additional 3 minutes.
  • If you're eating these right away, I like to toast my buns while I'm cooking the burgers. Assemble with your toppings and the mayo and enjoy!
